To make violet pearls, violet seeds and candied violet petal fragments are used in the preparation of small round candied balls (dragée). They are about the size of a small bead or pearl, with a deep purple hue, polished pearlescent surface, and a delicate violet aroma and flavour. Traditionally used as a garnish for pastries. They can be crushed with a mortar and pestle into fragments and then folded into ice cream base for added flavour, texture and colour.
