Olives with a lovely rose and violet hue from the south of France. They are plump and meaty appearance with a sharp acidic flavour. They are called cut because thin slashes are made on the surface of the olives to allow the brine used to cure them to penetrate the olive more fully. Their brine usually contains lemons and this contributes to their acidic profile. Delicious olives on their own or combined with extra virgin olive oil, herbs and lemon rind for marinating. Perfect in stews with artichokes and olives or as a garnish in Martinis.
